Reese’s Peanut Butter Cup Mini Cheesecakes

So most people who know my husband and I, know we love Reese's peanut butter cups. It's in every gift that comes with candy. (Such as, Stocking at Christmas, Easter, Valentine's Day, Halloween...you get the idea)
 So when I found this recipe on Mom On Timeout blog, I knew I had to try it. So I pinned it of course to my Sweet Tooth board which is for dessert recipes that I want to try. I have a completely different board for ones I have tried. (Seriously, am I the only one that does that?) So here is the recipe for you to pin, share, tweet, or whatever your little heart desires. Ingredients 

Graham Cracker Crust


3/4 c graham cracker crumbs

3 Tbsp sugar
3 Tbsp butter, melted

Cheesecake

12 Miniature Reese's Peanut Butter Cups
2 (8 oz packages) of light cream cheese or regular
1 c sugar
1/4 c all-purpose flour
2 eggs, room temperature
2 tsp vanilla extract

Topping

1/2 c Reese's Peanut Butter chips
1/2 c chocolate chips
2 tsp shortening, divided


Directions

1| Preheat the oven to 350. Take out eggs to help them get to room temperature, and the cream cheese packages to get softer it makes it easier to beat. Usually 30 minutes works best. Place a cup liner in each cup of your muffin pan. Make the graham cracker crust by combining the graham cracker crumbs, 3 Tbsp sugar, and 3 Tbsp melted butter. Combine until nice and crumbly.

2| Press the crust into the bottom of each cup. I use about a tablespoon of the mixture for each cup and then use the bottom of a ice cream scoop to flatten the crust down.

3| Remove the wrappers from the Reese's. Place a Reese's in the center of the crust in each cup.

4| Beat the cream cheese until nice and fluffy. 

5| Add in the sugar, flour and vanilla and continue beating until well combined. Add in the eggs one at time making sure they are well mixed.

6| Spoon the cream cheese mixture over the Reese's, evenly dividing the mixture among the 12 cups. I use about 1/4 c of the mixture for each cup. Bake for about 20-25 minutes until the cheesecakes are set.

7| Let the cheesecakes cool they are really better after they've cooled and chilled for a while. Melt the peanut butter chips and 1 tsp of shortening in the microwave and then use a fork to swirl the melted chips over the top of the cheesecakes. Do the same with the chocolate chips. Enjoy!

8| Makes 12 cheesecakes. Store in refrigerator.

Past Week Recap

This past week was a by far a good week, even if life has been getting in the way it seems. We still had some opportunities to get out on the water and do some much needed fishing and just enjoy the scenery.

A Catfish I caught, he was a fighter.
 Lake Havasu is by far a beautiful lake, it's beautiful teal-green waters remind me of something tropical, even though this lake is far from it. Lake Havasu sits on the border of California and Arizona, with the Colorado River running right through. This lake is a desert lake that attracts over 750,000 guests each year, mainly for boating recreation but fishing is another bonus to Lake Havasu as well. Ken Duke of Bassmaster comments on Lake Havasu as, "Coming in at No. 20 is Lake Havasu, generally considered the best desert lake in the country and a fishery that offers both Largemouth and Smallmouth bass." It has been announced that next year Lake Havasu will be one of the choosen lakes to host the Bassmaster Elite Series, May 7-10, 2015. My husband is so excited and it will definitely bring lots of people near and far to our town of Lake Havasu City. Maybe sometime when you are in the area you can plan a trip to this little gem, in the desert, we call home.

I Became a MOM, a Fur Baby MOM

So, its been awhile, but I became a fur mom to another baby. It was a decision that had been thought about, but was a split decision at the last minute. A friend had told me her friend, who had just bought an adorable male French Bulldog needed a good home after the new owner had an allergic reaction to him. 
Of course I saw pictures and right away I was hooked, but my husband was in love at first sight. This puppy was mainly for my husband, he wanted a dog for him to take out on the boat and fish with, so ultimately the decision was up to him. I ended up driving four hours one way to pick up this guy, and the moment I saw him, I knew Josh and I had a new little one in our family.

I will say I haven't raised a puppy in about seven years, but oh my gosh I officially think they are worse than a baby, or at least this puppy is a lot more work than my Yorkie Poo was at his age. I have to get up every couple hours to let them out of the crate at night, they don't wear diapers to catch any of it which makes it so much fun to clean, thank goodness we have title, they chew on everything, they don't hold still unless sleeping, they cry all night practically from being in their crate, the list could go on and on. 
Now it may seem like I am not too happy about this puppy after only 2 weeks but I definitely feel that people underestimate a new puppy, thinking it will be so easy. Getting a puppy is a serious decision and should be talked and thought about very hard. I am so glad I decided on getting one now before we have kids, I don't think I could do this while taking care of a little one too. So, yep, I have been very busy and I will definitely be trying to write more, but if you notice my absence at least you know what I will be doing, being a fur baby MOM.
