Tomato Basil Parmesan Soup

This soup is by far my favorite soup, it's so creamy and has so much flavor your taste buds will love you. I found this recipe originally for the slow cooker but the recipe also came with instructions on the stove too! I hope you guys find this soup to die for as much as I do. My husband even loves it and told me from the start our relationship he hated soup. Ha Ha not anymore! Which is definitely one of the reasons I love to cook. I did end up using lighter versions of things to make this soup healthier and substituted some items for others.  I have both ways on here for you in case it's one of those days you need more time in the day and want to use the slower cooker recipe. I usually go for the stove top version unless the day permits me.



Slow Cooker Version

2 (14 oz) cans diced tomatoes with juice
1 cup finely diced celery
1 cup finely diced carrots
1 cup finely diced onions
1 tsp dried oregano (1 Tbsp  if fresh)
1 Tbsp dried Basil (1/4 cup fresh)
4 cups chicken broth
1/2 bay leaf
1/2 cup of flour
1 cup Parmesan cheese ( I used reduced fat)
1/2 cup of butter
2 cups half and half (I used fat free half and half, you could use skim milk too)
1 tsp salt
1/4 tsp black pepper

Directions

1. Add tomatoes, celery, onions, carrots, chicken broth, oregano, basil, and bay leaf to large slow cooker.
2.  Cover and cook on LOW for 5-7 hours, until flavors are blended and veggies are soft.
3.  About 30 minutes before serving soup, prepare a roux. Melt butter over low heat in a skillet and add flour. Stir consistently  for 5-7 minutes ( I only did 5). Slowly stir in 1 cup of hot soup, then add another 3 cups and stir until smooth (I did one cup at a time). Then add all of that back into the slow cooker. Stir and add the Parmesan cheese, warmed half and half, salt and pepper. Add any additional basil and oregano since slow cookers tend to make things bland even with seasonings, it cooks the heck out of the seasonings.
4. Cover and cook on LOW for another 30 minutes or so until ready to serve.

Stove Top Version

1/4 cup Olive Oil
4 cups chicken broth
1/2 bay leaf
1/2 cup of flour
1 cup Parmesan cheese ( I used reduced fat)
1/2 cup of butter
2 cups half and half (I used fat free half and half, you could use skim milk too)
1 tsp salt
1/4 tsp black pepper

Directions

1. Heat oil in 4 Qt. soup pot. Add celery, carrots, and onions. Sauté for 5 minutes. Add basil, oregano, bay leaf, tomatoes, and chicken broth.  Bring it to a boil reduce heat and simmer for 15 minutes until carrots are tender.
2. While soup simmers, prepare a roux. Melt butter over low heat and then add flour and cook, stir consistently, 5-7 minutes ( I only did 5 minutes). Slowly stir in 1 cup of hot soup. add another 3 cups and stir until smooth ( I did one at a time). Add back into soup pot.
3. Simmer, stirring consistently until soup thickens. Add Parmesan cheese and whisk to blend. Stir warmed half and half, salt and pepper. Simmer on low for 15 to 20 minutes, stirring occasionally.

28-Day Jumpstart Challenge

So with a wedding in August next year for my best friend, I decided as of December 1st I am doing a 28 Day Jumpstart Challenge by Fit Girls. I've been wanting to get fit, but with wedding stuff from this past year and living in 110 degrees most of the time.(I know excuses don't mean jack) I just had not had the motivation, plus the fact I don't want to spend money toward a Gym membership either. Review on ColorProof Hair Care

So I recently went home (San Diego) to visit family and so my husband could fish a Tournament of Champions for the San Diego Bassmasters Club. When I was there I visited a friend I have known for years, Cara Cassibry. She actually did my hair and makeup for my wedding and I loved it! I can definitely tell you I am really picky about my hair and have only loved one person doing my hair which was a really good friend of mine. Once I had Cara do my wedding hair I knew I had another great hairstylist to go to. So I decided on a red/violet color with highlights, and definitely love how it turned out. The Crazy Smooth Extreme Shine Oil Treatment is amazing! I only use a dime size and put it on my end of my hair where it's the most dry. You can put it on wet or dry hair, I usually do dry and style. My hair feels so nice and soft and has great shine from it. I usually only use it once between washes it's that good.

The shampoo and conditioner again are wonderful! I love that I am using a product that is for colored hair and can also help for my hair type. Comfort Sunday: Spinach and Ricotta Ravioli Bake

I love ravioli, what is not to love?! It's pasta and cheese together, my two favorite things, yum! When it comes to Sunday and Monday I usually want something easy and usually want something completely yummy. So I figured from now on I would make them my comfort food days and my easy recipes. This recipe will last both my Husband and I two nights and it was by the far one of the easiest meals to make.



Ingredients:

(1) bag of frozen ravioli ( I used Spinach and Ricotta)
(1) jar of marinara Sauce
(1) bag (2 cups) of shredded mozzarella Cheese
Parmesan cheese 
Dried Basil

Directions:

First heat the oven to 400 degrees. Spray 9 x 13 baking dish with cooking spray.

Use 3/4 cup of sauce to spread on the bottom of dish. Arrange half of the ravioli in a single layer over the sauce; top with half of the remaining sauce and then 1 cup of cheese. Repeat layers one more time, starting with ravioli, then sauce and last cheese. Shake Parmesan cheese over it and sprinkle some dried basil too.

Cover with aluminium foil and bake for 30 minutes. Remove foil and bake uncovered for additional 10 - 15 minutes or until hot and bubbly in the center. Let it stand for 10 minutes before serving.
